Popular Indian Tandoori sweet corn🌽 Follow | Share | Tag Your best friends and lets make them crave😄

Ingredients:
4 large corn cobs
1 cup hung curd or regular yogurt
1 tbsp Kashmiri chili powder
1 tsp cumin powder
1 tsp coriander powder
1 tsp dried fenugreek leaves (kasuri methi)
1/2 tsp black pepper powder
1 tsp salt (adjust to taste)
Juice of 1 lime (or lemon)
2 tbsp mustard oil
A pinch of orange food coloring (optional, mainly for visual appeal)

Instructions:

Parboil the corn cobs: In a large pot of boiling water, add the corn cobs and cook them for about 5 minutes. This softens the corn and reduces grilling time. Remove the corn from the water and let them cool.

Marinade: In a mixing bowl, combine hung curd or regular yogurt, Kashmiri chili powder, cumin powder, coriander powder, dried fenugreek leaves, black pepper, salt, lime juice, and mustard oil. Add optional orange food coloring if desired. Mix everything well to form a smooth and vibrant marinade.

Marinate the corn cobs: Generously coat the cooled corn cobs with the prepared marinade, ensuring they are evenly covered. Use a brush or your hands for this, getting the marinade between the corn kernels for maximum flavor.
Marinate and rest: Place the marinated corn cobs in a ziplock bag or a covered container and refrigerate for at least 1-2 hours. For the best results, marinate overnight, allowing the flavors to intensify.

Grill the corn: Preheat your grill to medium-high heat. Remove the corn cobs from the marinade and shake off any excess. Place the corn cobs on the grill and cook them, turning occasionally, until they develop a nice char and are fully cooked. This should take around 10-15 minutes, depending on the grill’s heat.

Optional basting: While grilling, baste the corn occasionally with some leftover marinade to enhance the flavor and moisture.

Serve: Once the corn cobs are fully cooked with a beautiful tandoori char, remove them from the grill. Garnish with additional lime juice and chopped coriander leaves if desired. Serve hot and enjoy delicious tandoori corn!
