Have you ever tried Indian food outside of India? It's generally sweet, light on spice, loaded with food colouring, and soupy.

When I went to Punjab, Butter Chicken was thicker, richer, and had a smokey taste. I could taste the spices, not the sugar. In Goa, a real Vindaloo is actually more tangy than hot. This is just the tip of the iceberg because Indian food is the most complex and diverse in the world.

By comparison, Indian food served in foreign countries is like a cheap imitation.

But it's not all bad, because that food has made Indian food extremely popular around the world, and it's a gateway that's leading foreigners, like me, to visit India to taste the real thing.
