An easy recipe that is high in protein and fat!

I admit that I had never eaten tofu before, so it was also a first for me. It resembles paneer or cottage cheese in appearance and flavour. However, it is made from soya bean milk and has a completely different composition than cottage cheese. Before I get to the recipe, I'd like to share some helpful hints. Before using the tofu, thoroughly rinse it with cold water. Then soak it in water for a while to soften and make it spongy.

Another thing to remember is that, unlike paneer or cottage cheese, tofu can become very hard and stretchy if overcooked. Tofu can be used in place of cottage cheese in any recipe that calls for it. Today I'm going to show you how to make Tandoori Tofu. Once you've mastered it, you'll wonder why you've been eating Indian food out when you can make it at home.

If you don't have all of these spices, simply ask for 'Tandoori Masala' at any Indian store and use one tbsp for this recipe.


Tandoori Tofu Ingredients

You will need the following main ingredients to make the Tofu tikka recipe.

Extra firm tofu:
Extra firm tofu works here because it holds its shape well and is great for air frying, baking, grilling, or pan-frying.
Vegetables:
I like to use colored bell peppers, and red onion cut into cubes. You can also use other vegetables like mushrooms, zucchini, and baby corn.

Yogurt -
Use plain full-fat hung curd or Greek yogurt for a thick creamy marinade.
Besan (Gram Flour) - is added to help tofu and veggies to coat well and not stick to the air fryer basket/pan. I like to roast it slightly on a pan on low heat until fragrant and light brown, cool, and then use. If you don't have besan, use corn or all-purpose flour.

Ginger and garlic:

Use freshly minced or paste.

Spices:
I have used turmeric, Kashmiri red chili powder, cumin powder, garam masala (or tandoori masala), chaat masala, and salt.

Oil:
I like to use olive oil for cooking.
Dried fenugreek leaves - Also known as Kasuri methi, give a nice flavor to the dish. If you don't have, skip it.

Lemon juice:
use freshly squeezed lemon juice for the best flavor.

The Marination...

Make a paste of all of these ingredients and thoroughly combine them. Save the lime juice for last. Because Greek yoghurt is so moist, you don't need to add any water to this puree. Tofu should be cut into 1-inch cubes and lightly poked with a fork. Make sure the marinade is not runny and cover the tofu with it. Add the capsicum and tomatoes to the marinade as well. Keep this marinade in the fridge overnight. The longer it marinates, the better the flavour. Remember to include 1 teaspoon ghee in this marinade.

Preparation
When you're ready to eat the next day, skewer the tofu and vegetables and grill them. I cooked them in my microwave on the grill and micro option for five minutes. Grill them in the tandoor or on the grill for five to seven minutes, depending on how charred you want them.


Tofu can also be sautéed in a pan with oil or ghee. Make them anyway; just don't overcook them.


Vegetables of your choice can be added to the skewers. Eat the tandoori tofu hot, with a squeeze of lime on top.
